Date-sweetened Steel Cut Oats

Steel cut oats make a wonderful warming breakfast, especially in the colder months when we need something substantive to kick off our day. Use this as a template for oats with your choice of fat, nuts/seeds, and fruit. The dates provide a nice natural sweetness and additional iron. Feel free to add cinnamon, nutmeg, or other spices you enjoy as well.

Ingredients

1 cup steel cut oats

3 cups water

5 medjool dates, pitted and cut into small pieces

1 tbsp unsalted butter, ghee, or coconut oil

1/2 tsp sea salt

2 tbsp hemp seeds, ground flax meal, or chia seeds

1 cup fresh or frozen berries

1/2 cup almond slices, walnuts, pecans, hazelnuts, or pistachios

Directions

1Combine the first 5 ingredients in a medium pot. Stir and bring to a boil. Reduce the heat to low and cover. Allow it to simmer for 20-25 minutes, or until all of the water is absorbed.

2Stir in hemp, flax, or chia seeds for an added boost in protein and good fats. Top with fruit and nuts of choice and enjoy.

To cut down on cooking time and make these more digestible, soak the grains for 8 hours or overnight. In the morning, add the dates, salt, fat, and bring it to a boil. Reduce the heat to low and simmer for another 5 minutes or so (while stirring to prevent sticking). Add a little more water if it's too thick. Stir in the hemp, chia, or flax seeds and top with your favorite nuts and fresh fruit.
